Serve this cobbler warm with vanilla ice cream

Blueberries are a nutritional ‘superfood’ and there was a bumper crop this year. We froze 20 pounds and I am having a great time finding new ways to use them. This recipe is from my mom. I’ve already lost it once, so I’m committing it here for my own convenience and your enjoyment.   

 BLUEBERRY PEACH COBBLER  

3 CUPS SLICED PEACHES  

2 CUPS BLUEBERRIES  

Gently mix together in large bowl and top with mixture of:  

2/3 cup white sugar  

3 TBSP. all-purpose flour  

½ tsp. ground cinnamon  

Mix together gently and pour into ungreased wide, shallow baking dish.  

Sprinkle with 2 TBSP. Lemon juice  

Dot with 2 TBSP. Margarine  

Topping  

Mix together:  

1 cup all-purpose flour  

2 TBSP. sugar  

1 ½ tsp. baking powder  

¼ tsp salt  

Cut in 1/3 cup Margarine  

Beat large egg and add 3 TBSP milk  

Mix lightly into dry ingredients until moist and dry flour is incorporated.  

Drop by 9 spoonfuls over Fruit mixture  

Brush topping with small amount of egg white and sprinkle with a tsp. of sugar for a great presentation.   

Bake 375 degrees 25-35 minutes  

Note: if fruit is delicate, such as frozen berries, you can put the fruit directly into the baking dish and spoon the sugar mixture over top and just let it filter down. Shake it a bit to move it around.
